Breakfast Time

I couldn't sleep this morning, so I woke up at 6:30am, checked my e-mail (and Brents :), checked the blogs, screwed around on the puter a little bit, then went down stairs at 7am. I had time to cook breakfast. No more cereal :) First, I made blueberry muffins (from a mix). The kids always like those. Then, I made French Toast muffins. They looked real nice.

Here's Jacob, posing for the picture.

Joe Joe eating him muffin.

Jimmy and his juice. Aren't you proud of me. He drinks from a big kid cup!

Here's Joe's French Toast muffin. I made the mistake of putting syrup on it for everyone. Little did I know, they didn't want syrup. They wanted it plain. I'll remember that for next time.

French Toast Muffins
(makes 6 muffins)

4 slices bread
6 eggs
2 Tbsp milk
1 Tbsp vanilla
1/2 tsp cinnamon

1. Cube the bread.

2. Mix the eggs, milk, vanilla and cinnamon together well in a medium bowl.

3. Add the bread.

4. Fill 6 unlined greased muffin tins with the mixture.

5. Bake at 425 for about 15 minutes, or until done.
