Mini Cheesecakes
Ingredients:
12 vanilla wafer cookies
2 pkg cream cheese, softened (we used 1/3 less fat)
1/2 cup sugar
1 tsp vanilla
2 eggs
OK, i did this recipe a little different too. I don't like to follow the recipe, can you tell. I didn't know this about myself until I started blogging this, but I actually change the recipe a lot of the time. Oh well. It makes it taste better to me!
So, I split the recipe in 1/2. See, I only had 1 cream cheese left.
Then, I used the mini muffin tin, not the regular one. I got 23 muffins out of a batch. Honestly though, they could have used a bit more filing, but were fine.
I put jam on the top and they were quite tasty, if I do say so myself!

- Line muffin tin with FOIL LINERS. Place one vanilla wafer in each liner.
- Mix cream cheese, vanilla, and sugar on medium speed until well blended. Add eggs. Mix well.
- Pour over the wafer, filling 3/4 full.
- Bake at 325 degrees for 25 minutes. Remove from pan when cool.
- Chill. Top with fruit preserves or chocolate.
