Breakfast Time
I couldn't sleep this morning, so I woke up at 6:30am, checked my e-mail (and Brents :), checked the blogs, screwed around on the puter a little bit, then went down stairs at 7am. I had time to cook breakfast. No more cereal :) First, I made blueberry muffins (from a mix). The kids always like those. Then, I made French Toast muffins. They looked real nice.



French Toast Muffins
(makes 6 muffins)
4 slices bread
6 eggs
2 Tbsp milk
1 Tbsp vanilla
1/2 tsp cinnamon
1. Cube the bread.
2. Mix the eggs, milk, vanilla and cinnamon together well in a medium bowl.
3. Add the bread.
4. Fill 6 unlined greased muffin tins with the mixture.
5. Bake at 425 for about 15 minutes, or until done.
